250 GM PAU FLOUR OR HIGH PROTEIN FLOUR (I'M ALWAYS USING PAU FLOUR)
3 TBSP SUGAR
1/8 TSP SALT
1 TBSP MILK POWDER
1 TSP DRY INSTANT YEAST
11/2 TBSP VEGE SHORTENING 
2 TSP BREAD SOFTENER 
1 TSP BREAD IMPROVER
ALL PURPOSE MAYO
CHICKEN FLOSS
WARM WATER


BAHAN-BAHAN

250 GM TEPUNG PAU ATAU TEPUNG HIGH PROTEIN (SAYA BIASA GUNAKAN TEPUNG PAU)
3 SUDU MAKAN GULA
1/8 SUDU TEH GARAM
1 SUDU MAKAN SUSU TEPUNG
1 SUDU TEH YIS
11/2 SUDU MAKAN MINYAK SAYUR
1 SUDU TEH BREAD IMPROVER
2 SUDU TEH BREAD SOFTENER
MAYONIS SERBAGUNA
SERUNDING AYAM
AIR SUAM


STEP

  • MIX WELL ALL TOGETHER FLOUR, MILK POWDER, SUGAR AND SALT THEN MIX WELL YEAST
  • MIX WITH WARM WATER UNTIL THE FLOUR CAN KNEAD NICELY ( MAKE SURE THE DOUGH NOT TOO DRY . LET IT STICK A BIT WITH YOUR HAND)
  • KNEAD ABOUT 45 MINUTES
  • PUT BREAD SOFTENER AND BREAD IMPROVER KNEAD ABOUT 5 MINUTES
  • PUT VEGE SHORTENING THEN KNEAD AGAIN ABOUT 5 MINUTES
  • THEN MAKE IT ROUND SHAPE AND SMOOTH NICELY THEN PUT INSIDE BOWL AND WRAP WITH PLASTIC THEN LET THE DOUGH INCREASE TRIPLE SIZE. (NORMALLY I LET IT ABOUT 45 MINUTES)
  • TAKE OUT THE DOUGH KNEAD ABOUT 30 SECONDS THEN DIVIDE 8 PIECES

  • SHAPE INTO A BALL ALL PIECES THEN LET IT REST IN WARM PLACE ABOUT 45 MINUTES AGAIN TO RISE
  • WHEN THE DOUGH RISE TRIPLE SIZE THEN TIME TO BAKE :-)
  • BAKE ABOUT 15- 20 MINUTES WITH 160'C (DEPEND WITH YOUR OVEN)
  • AFTER BAKE REMEMBER PUT WET CLEAN TOWEL ON TOP BREAD FOR 1 MINUTES FOR MAKE BREAD TOP SOFT (THIS MY TRICK) 
  • LASTLY WE JUST PUT MAYO ON TOP BREAD THEN FOLLOWING CHICKEN FLOSS..
- MAKE SURE HEAT YOUR OVEN FIRST ABOUT 20 MINUTES BEFORE BAKE YOUR BREAD

  • CAMPURKAN TEPUNG, SUSU TEPUNG, GARAM DAN GULA SEHINGGA SEBATI DAN KEMUDIAN CAMPURKAN YIS DAN GAULKAN LAGI.
  • CAMPURKAN AIR SUAM SEDIKIT DEMI SEDIKIT SEHINGGA MENJADI DOH (INGAT JANGAN DOH KERING ATAUPUN TERLEBIH AIR. AGAK-AGAK MELEKIT SEDIKIT DI TANGAN SAHAJA.)
  • ULI DOH SELAMA 45 MINIT 
  • CAMPURKAN BREAD SOFTENER DAN BREAD IMPROVER DAN ULI SELAMA 5 MINIT DAN KEMUDIAN CAMPURKAN MINYAK SAYUR. ULI SELAMA 5 MINIT LAGI
  • KEMUDIAN BULATKAN DOH SEHINGGA HALUS DAN LETAK KE DALAM MANGKUK KEMUDIAN TUTUP DENGAN PLASTIK PEMBUNGKUS DAN BIARKAN SELAMA 45 MINIT SEHINGGA SIZE DOH MENJADI 3 KALI GANDA.
  • SETELAH DOH NAIK ULIKAN LAGI SELAMA 30 SAAT LAGI DAN BAHAGIKAN SEBANYAK 8 BAHAGIAN. DAN BULAT-BULATKAN
  • BIARKAN DOH SELAMA 45 MINIT LAGI DAN BIARKAN DOH MENJADI 3 KALI GANDA BESARNYA.
  • SETELAH DOH NAIK SEBANYAK 3 KALI GANDA BOLEH LAH DI MASUKKAN DALAM OVEN DENGAN KEPANASAN 160'C SELAMA 15 - 20 MINIT MENGIKUT OVEN.
  • SETELAH ROTI MASAK KELUARKAN DARI OVEN (TIP SAYA BIASA LEMBUTKAN ATAS ROTI LETAKKAN TUALA BASAH BERSIH KAT ATAS ROTI YANG MASAK ITU SELAMA 1 MINIT.
  • SETELAH ITU BOLEH LAH LETAKKAN MAYO KAT ATAS ROTI TERSEBUT DAN SERUNDING AYAM.
